Ms Vy dinner

We were very privileged to have Trinh Diem Vy, one of the foremost chefs in Vietnam, at Dandelion to present a menu of her signature dishes, as part of the Melbourne Food and Wine Festival in March 2012.

Coming from a long line of discerning eaters, Ms Vy’s home town is Hoi An in Central Vietnam, an ancient town which was formally one of the most important ports on the China Sea and a melting-pot for many cultures including Japanese, Chinese, Portugese and French.

Her passion for food knows no bounds. The continuing popularity of her restaurants:  CargoMermaid & Morning Glory , and also the Cooking School is testament to Ms Vy.

She is on one hand championing Vietnamese Cuisine to the modern world, acting as a guardian to traditional family recipes and tradition, whilst on the other is an innovative entrepreneur and inspiring visionary.   

She dreams that one day Vietnamese Cuisine will find its place in the ‘New Cuisine’ of the world – where lightness, freshness and balance are at the essence of every meal.

After last nights triumphant dinner, we thoroughly concur !
